Maple Chipotle Black Beans

Serves 4-6

This is one of the easiest recipes you can make – it contains ingredients that are pantry staples, and it’s ready in 15 minutes.

I love these beans in a salad, in tacos, with eggs, wherever! they’re so versatile and so delicious. A great source of fiber and protein, black beans also contain a significant amount of the antioxidant anthocyanins.

Ingredients:

2 540ml cans of black beans, rinsed

1 small onion, chopped

2 cloves of garlic, crushed

2T olive oil

¼ t chipotle chile powder

1T ground cumin

1T maple syrup

Salt to taste

Heat olive oil in a large pan and add garlic and onion. Sautee until deeply browned.

Add the rest of the ingredients and cook until beans are softened, stirring occasionally – about 10 mins.

I also love to add ½ bunch of roughly chopped cilantro to this recipe.
