Ingredients

  • 1 1/4 cups All purpose flour
  • 1 1/2 cups milk
  • 3/4 cup ricotta cheese (smooth or regular)
  • 1/4 cup butter, melted
  • 1 egg
  • 1 tablespoon vanilla extract
  • 3 teaspoons baking powder
  • 1 heaping tablespoon lemon zest
  • butter or other fat for frying

Instructions

  1. Whisk all ingredients together in a large bowl

  2. Heat butter in a frying pan until melted and bubbly

  3. Fry pancakes on medium-high heat, until browned on each side
