Dairy-Free Key Lime Pie Dessert Cups

This tart-sweet Spring dessert is easy and quick to make. The best part? It's delicious and made from healthy ingredients!

Ingredients

  • 3 cups raw cashews soaked in 1.5 cups Almond Breeze Original Unsweetened almond beverage or Almond Breeze Almond Coconut Unsweetened almond beverage
  • 1 cup (additional) Almond Breeze Original Unsweetened almond beverage or Almond Breeze Almond Coconut Unsweetened almond beverage
  • 1/4 cup maple syrup
  • 5 tablespoons liquid coconut oil
  • 2 teaspoons vanilla extract
  • 2 teaspoons lime zest plus additional for garnish
  • 6-8 tablespoons freshly squeezed key lime juice or regular lime juice if you can’t find key limes
  • 24-36 crushed graham wafers or Oreo wafers

Instructions

  1. In a high speed blender, combine the soaked almonds and the maple syrup, coconut oil, vanilla, lime zest, and lime juice. Blend, working up to the blender’s highest speed until the mixture is completely smooth. This will take upwards of 5 minutes. The mixture will appear almost whipped but will still be pourable. If there are grainy bits or small chunks or any perceptible texture besides glass-like smoothness, keep blending.
  2. In six serving glasses or dishes, layer the graham or Oreo wafers and the Almond Breeze mixture. Refrigerate until chilled.
  3. Garnish with lime zest and whipped cream, if desired. YUM.
