In a high speed blender, combine the soaked almonds and the maple syrup, coconut oil, vanilla, lime zest, and lime juice. Blend, working up to the blender’s highest speed until the mixture is completely smooth. This will take upwards of 5 minutes. The mixture will appear almost whipped but will still be pourable. If there are grainy bits or small chunks or any perceptible texture besides glass-like smoothness, keep blending.
