Breakfast on a stick? YES! These creamy, healthy chia pudding pops combine the sweet-tart flavour of Zespri Green kiwifruit with the creaminess of coconut for a delicious pudding pop you're going to love.

Ingredients
Popsicles
1 1/2cupsfull-fat coconut milk
1/2cupAlmond Breeze vanilla flavour
3Zespri SunGold or Green kiwifruit peeled and diced
1/3cupunsweetened coconut flakes
1/3cupchia seed
3tablespoonsmaple syrup or to tasteyou can put less if you want
Chocolate dip (optional)
1/2cupsemisweet chocolate chipsvegan or regular
2teaspoonscoconut oil
Instructions
To make the popsicles:
Combine all the popsicle ingredients except for the kiwifruit, and whisk to blend well.
Place in the refrigerator for at least two hours and up to overnight, so the chia seeds swell and the pudding sets.
Layer the chia pudding and the kiwifruit into popsicle molds.
Freeze until set.
To make chocolate dip:
Combine the chocolate chips and the coconut oil in a bowl.
Using intervals of 15-20 seconds and stirring well in between, melt the chocolate and coconut oil together in the microwave.
Use a spoon to put a layer of chocolate onto each side of the popsicles. Chill until set.
