National Carbonara Day Best Spaghetti Carbonara Recipe

Pasta Carbonara is sometimes complicated, but it doesn't have to be! Here's my recipe for this simple 4-ingredient dish that the entire family will love!

Servings 4

Ingredients

  • 1 egg + 3 egg yolks room temperature
  • 2 ounces of grated pecorino or parmesan cheese or 1oz and 1oz of both
  • 1/4 pound thick-cut bacon or Guanciale or pancetta cut into small pieces
  • 1 pound Barilla spaghetti
  • Black pepper

Instructions

Make the pancetta:

  1. In a large pan, fry the pancetta until almost crisp, then set aside.
  2. Reserve 1-2 tablespoons of the fat in the pan. (you’ll be putting the pasta into this same pan in a few minutes)

Make the sauce:

  1. Whisk together the eggs and cheese. Set aside.
  2. Boil the pasta until it’s al dente. Reserve 1 cup of the pasta water and then drain the pasta.
  3. In the pan that you cooked the pancetta, reheat the pancetta slightly if needed.
  4. Keeping the pan on low heat, add the pasta to the pan with the pancetta.
  5. Stir 1/2 of the pasta water into the egg and cheese mixture, then pour over the pasta.
  6. Toss the pasta to thoroughly coat with the sauce, adding more pasta water to achieve a creamy consistency.
  7. Serve immediately with extra cheese and lots of black pepper.
