Pear Spice Muffin Recipe

Ingredients

  • 1 cup raw oatmeal I use large-flake for texture
  • 1 cup all purpose flour
  • 1 cup almond flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup 2% Greek yogurt
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2 pears cored and diced into small pieces (I use red or green d’Anjou or Bartlett)
  • 2/3 cup raw walnut halves or pieces toasted and chopped (optional)

Instructions

  1. Preheat oven to 400F.
  2. Line a muffin tin with baking cups.
  3. Mix together the first 9 ingredients in a large bowl, and set aside.
  4. In another bowl, cream together the butter and sugar until fluffy.
  5. Add the eggs and vanilla, and beat until incorporated, then add the milk and Greek yogurt, beating for another 1-3 minutes.
  6. Slowly fold the wet ingredients into the dry ingredients.
  7. Add the nuts and pears, and mix gently to combine, until most of the dry flour is absorbed into the batter.
  8. Spoon batter evenly into muffin cups.
  9. Bake muffins for 30 minutes or until a knife inserted into the centre comes out clean.
