I love kiwifruit.
It’s not always top of mind when I’m in the grocery store, but every time I bring home Zespri Green kiwifruit, I fall in love all over again with its delicious flavour and crunchy little seeds. It’s like a little happiness, wrapped up in a cute package.
I can’t forget about kiwifruit’s health benefits either – a serving of two Green kiwifruit is 80 calories, has as much potassium as a banana, and contains as much fiber as a bowl of Bran Flakes. Kiwifruit also contains a natural digestive enzyme called actinidin – that can help with digestion.
Another tip – you can actually eat the skin of the kiwifruit! Zespri SunGold kiwifruit which are sweeter than Green kiwifruit and have a tropical taste, have smooth skins, and seriously I just pick the fruit up and bite into it like I would an apple. Delish.
If you don’t want to eat the skin, just cut a kiwifruit in half and scoop out the flesh with a spoon. No annoying peeling or getting messy.

I partnered with Zespri to develop this recipe (and another one, coming up). I wanted to make something with a new take on an old favorite that would bring my readers some joy on a busy morning or whenever they want a nutrition-packed snack. The result?
These kiwi coconut chia pudding pops!
Sort of like breakfast on a stick, this recipe combines the sweet-tart taste and beautiful green colour of kiwifruit, with the creaminess of my classic coconut chia pudding. For a more indulgent treat, you can also dip the pops into chocolate. Love.

These kiwi pops are vegan and gluten free, too.
Whip up a bunch of these babies so you always have them in the freezer! The recipe can be doubled.
Breakfast on a stick? YES! These creamy, healthy chia pudding pops combine the sweet-tart flavour of Zespri Green kiwifruit with the creaminess of coconut for a delicious pudding pop you're going to love.
- 1 1/2 cups full-fat coconut milk
- 1/2 cup Almond Breeze vanilla flavour
- 3 Zespri SunGold or Green kiwifruit peeled and diced
- 1/3 cup unsweetened coconut flakes
- 1/3 cup chia seed
- 3 tablespoons maple syrup or to taste you can put less if you want
- 1/2 cup semisweet chocolate chips vegan or regular
- 2 teaspoons coconut oil

Combine all the popsicle ingredients except for the kiwifruit, and whisk to blend well.

Place in the refrigerator for at least two hours and up to overnight, so the chia seeds swell and the pudding sets.

Layer the chia pudding and the kiwifruit into popsicle molds.

Freeze until set.

Combine the chocolate chips and the coconut oil in a bowl.

Using intervals of 15-20 seconds and stirring well in between, melt the chocolate and coconut oil together in the microwave.

Use a spoon to put a layer of chocolate onto each side of the popsicles. Chill until set.
