It’s Nutrition Month, and to celebrate the occasion, my friends at Butterball asked me to create a healthy, delicious recipe using their Easy Fresh line of turkey products.

I love Easy Fresh because they make turkey a foolproof, easy choice for any day. This is my second year of working with Butterball, and I’m still not over how delish their Easy Fresh turkey is. They come vacuum packed to seal in freshness, and there’s no need to thaw (although if you want to freeze Easy Fresh products, just toss them into the freezer in their original packaging).

I’m sort of sick of chicken at this point, and turkey just gives me another healthy protein option. It’s high in B vitamins, zinc, and selenium. Go turkey!

This feta, spinach, and turkey bacon stuffed turkey breast recipe hit it right out of the park. It took 1 hour start to finish, and it was so delicious, I was literally eating it out of the pan while I was taking the photos. No joke. This Butterball Turkey Breast recipe uses beautiful green spinach, salty feta, and Butterball turkey bacon (50% less fat than pork bacon!) and creates a simple, family-friendly meal that’s perfect for leftovers the next day.

What You’ll Need

For the Spinach Mixture You’ll Need

  • chopped onion
  • minced garlic
  • olive oil
  • spinach
  • feta cheese
  • diced Butterball turkey bacon

For the Turkey You’ll Need

  • One Butterball Easy Fresh turkey breast, bone-in or boneless
  • olive oil
  • salt and pepper
  • garlic powder

How To Make Stuffed Turkey Breast

  • Preheat oven to 400F/205C.
  • Heat the 2 tablespoons of oil in a heavy (preferably cast iron) frying pan.
  • Add onion and garlic and cook on medium-low heat for 2-3 minutes.
  • Add spinach, cover the pan, and cook until spinach is just wilted, around another 3-4 minutes.
  • Remove from heat and place spinach into a bowl.
  • Crumble feta into the spinach and stir to combine. Add turkey bacon and mix ingredients together.
  • Using a very sharp knife, with the bone side down, make a widthwise cut in the middle of the turkey breast from one end to the other. Using your hand, open up a pocket in the turkey breast.
  • Stuff the pocket with the spinach, feta and bacon mixture.
  • Close the turkey breast as much as possible (the stuffing will be spilling out, which is fine).
  • Rub the outside of the turkey breast with 1 tablespoon of olive oil and add sprinkle with salt, pepper, and garlic powder.
  • Add 1 tablespoon olive oil to the pan and place the stuffed turkey breast into the pan, bone side down. If you’re making other vegetables in the pan with the turkey, toss those in olive oil and arrange around the turkey breast.
  • Cook at 400F until an internal temperature of 165F/74C is reached, around 40 minutes.

Tips and Notes

  • This recipe serves 3-4 depending on the size of the turkey breast.
  • Turkey breasts are cooked through once they reach an internal temperature of 165F/74C. Use an instant read meat thermometer for an accurate reading.
  • If you want substitutes, try swapping kale or even chopped broccoli for the spinach, and any type of cheese for the feta. I was thinking that chopped pine nuts would also rock in this filling.
  • For a complete meal, cook the turkey breast in a cast iron or sheet pan alongside vegetables such as Brussels sprouts and roasted potatoes!
  • This stuffed turkey breast would also go well with this Panzanella with Pesto Vinaigrette

Spinach and Feta Stuffed Turkey Breast

This is an incredibly easy, sophisticated recipe that's also family friendly! Also: it's ready in one hour, start to finish. 

Ingredients
Spinach mixture
  • 1 small onion chopped (around 1/2 cup)
  • 1-2 cloves garlic minced
  • 2 tablespoons olive oil
  • 5 oz spinach
  • 3 oz feta cheese
  • 2-3 slices Butterball turkey bacon diced

  • One Butterball Easy Fresh turkey breast bone-in or boneless
  • 2 tablespoons olive oil divided
  • Salt and pepper
  • Garlic powder
