I loooove Mother’s Day. I’m lucky enough to still have my mom, and even though we should treat our moms every day – not just on Mother’s Day – I still love honouring her with a meal and flowers on this holiday.

Mother’sDay is also fun for me, obviously because I’m a mom. My girls and husband make me breakfast in bed, which has gotten increasingly more edible as they’ve gotten older (both my girls and my husband, ha ha!). I love getting their cards and flowers and all the love they lavish on me that day. Plus, I can actually sleep in…sort of. We’re still working on that, and all of you who have kids know exactly what I mean.

These turkey bacon cheddar waffles are a next level delicious option for your Mother’s Day breakfast or brunch. My mom doesn’t like pork, so I used Butterball Turkey Bacon in this recipe and whoa – my family was ready to dig in before I even took the photos. My husband was lying in wait for me to be done so he could pounce on his share.

Butterball Turkey Bacon has less fat than pork bacon and is made with light and dark turkey meat that’s a great choice for anyone who doesn’t eat pork, or wants a bacon-style option that’s lighter in fat.

These waffles use my favorite from scratch batter recipe, along with turkey bacon and old cheddar cheese. Topped with maple syrup, they’re the perfect salty-sweet scrumptious meal to treat mom…and anyone, any day. As long as these waffles are coming out of the iron, there’s always going to be someone who wants to eat them. Trust me on that one.

These waffles are a bit of an indulgence, as most waffles are supposed to be. You can always cut down on the sugar in the recipe, but remember that it’s there for a reason – it not only sweetens the waffles, but also creates a brown, crusty outside on them that’s addictive and seriously amazing. That’s why waffles tend to have more sugar in the batter than pancakes.

Mother's Day Turkey Bacon and Cheddar Waffles

I love these crisp, savory waffles! They're easy to make and the from-scratch recipe is so special for Mother's Day...or any day!

Servings: 5 waffles
Ingredients
  • 1.25 cups all-purpose flour
  • 1.25 cups whole milk
  • 3 teaspoons baking powder
  • 3 tablespoons sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup butter melted
  • 1 cup shredded cheddar cheese
  • 10 slices Butterball Turkey Bacon cooked until crispy and crumbled or chopped
Instructions
  1. Preheat waffle iron on high.
  2. Combine the first 8 ingredients in a bowl and whisk until the batter is smooth.
  3. Add the cheese and bacon, mixing thoroughly until evenly distributed in the batter.
  4. Pour batter into waffle iron and cook according to manufacturer’s instructions, until waffles are crispy and browned.
  5. Remove from iron and serve with syrup and fruit.
