5-Ingredient Key Lime Macadamia Bites
If you love the taste of key limes, you’re going to LOVE these super-easy, delicious key lime macadamia bites!
A tangy, sweet, sour, tropical-tasting bite of heaven, these bites combine Medjool dates, key lime juice and zest, and the buttery deliciousness of macadamia nuts to create a perfectly portable, high-energy snack for your 3pm slump! The dates give you fiber and energy, the nuts give you protein and fat, and the lime…okay the lime gives you YUMMMM. Because LIME.
These babies come together in 5 minutes…blink and they’re done!
Hint: roll the limes on the counter before squeezing the juice out. They’re tricky to squeeze…they kept jumping out of my hand and rolling all over the kitchen floor…much to the delight of the dog!
- 1 cup pitted Medjool dates around 12
- ½ cup macadamia nuts
- 2 T key lime juice
- 1 T key lime zest
- Big pinch of salt
- 1 cup coconut to roll the bites in – I toasted mine but that’s optional.
In a high-speed blender, combine all the above ingredients except for the coconut. Blend until combined.
You can chill the mixture for an hour, which makes it easier to roll, or, do it immediately. It will stick to your hands a bit, but it’s totally fine and doable. Form into 12 bites.
Roll the bites in coconut. YUM.
